Rack ’em, stack ’em!

From birth, the idea that we should be eating only certain types of foods for breakfast, lunch and dinner has been ingrained into our brains. Traditionally something like cereal, eggs or pancakes for breakfast, salad or sandwich for lunch and then meat, veggies and potatoes for dinner. Well, the great thing about eating paleo is that all of those ideas are thrown out the window. There are no set meal times, you eat when you’re hungry. Steak for breakfast and a scramble for dinner is not unusual. As long as you are eating good quality foods, mix and match as you please.

Now, I understand it’s hard to get out of that systematic “American diet” routine. We have been trained to enjoy specific foods at specific times of the day. It’s no big deal… but if you are getting bored or running out of breakfast scramble and lunchtime salad ideas, mix and match or switch your meals up entirely.

I found this delightful twist on the breakfast scramble. Hope you enjoy. 🙂

Peach and Pecan Scramble:

• 1/2 peach, diced (or whatever delicious fruit is in season. Apple, nectarine, berries, apricot, etc)
• 2 Tbsp chopped pecans
• 1 tsp coconut oil
• 2 eggs
• 1 Tbsp unsweetened applesauce
• 1/8 tsp cinnamon

Heat the coconut oil in a small skillet over medium heat. Dice half of a ripe peach, and chop the pecans. Add the peaches and pecans to the skillet, stir fry for 2-3 minutes, or until the peaches soften a bit.

Meanwhile, crack the eggs into a bowl, add the applesauce and cinnamon, and beat well. Add to the skillet, mixing often. When the eggs have set, serve and enjoy.
