I have been sick all week and it’s been so awful. Thank goodness it wasn’t the flu because everyone and their dog seems to have that right now. Mine was more of a head cold, severe allergy, vertigo induced, boogery disaster. It literally put me out for an entire week. I regretfully made myself push through it and go to work for majority of the week so my coworkers had to listen to me blow my nose and talk to clients in the ever-so-sexy “I have a cold” man voice. Ha – at least it got some laughs.
Anyway, worst part was the sore throat. I wasn’t hungry for majority of the week but I craved something sweet and creamy to coat my throat. I sucked down hot toddies like nobody’s business and found this amazing ice cream recipe that I initially thought would be just “eh” in regards to taste compared to my beloved Sweet Rose Creamery and Luna and Larry’s coconut milk ice cream. WELL, I was pleasantly surprised. I thought the banana would be too strong and too sugary (weird, I know) but it was so delicious. The chips were my favorite part – they added this deep smokey flavor that I absolutely loved.
The flavors were simple and the banana creamed so nicely – I will definitely be experimenting with different additions to this instead of buying my ice cream from the store. I highly suggest you play around with this… it’s too easy not to.
Ingredients
1 Frozen Banana
1 Tbsp Sunbutter
1/2 Tsp Vanilla extract
1\2 Tsp Cinnamon
Chocolate chips
1 Tbsp coconut milk (optional)
It’s so easy to make. Blend all of the ingredients together in a food processor and top with chocolate chips.
Enjoy!
