Eating Paleo has without a doubt been the most significant contributor to me getting more fit since starting CrossFit. It is without a doubt the best and easiest way of eating healthy that I have tried. I decided to give it a try when my friend and fellow x-fitter Colleen, in the middle of a 30-Day strict Paleo challenge herself, was raving about what a difference it was making for her in everything from weight loss, to her WOD times getting faster, to being able to sleep better and wake up feeling more energized. I highly recommend this being the very first thing you read. In fact I would read that and them come back to this. Go ahead, I will wait.
That’s about it! I actually found that trying to think of Paleo meals during my 30-Day challenge led me to some of my favorite meals I have ever made.
If any of you ever want to cook some dinner together let me know and I would be happy to show you how to make some of my specialties like roasted Brussels sprouts with pecans and apricots. Yum!
